Huainan

In Anhui province

Huainan is a coal and power city along the Huai River in north-central Anhui. According to tradition, tofu was invented here by Liu An, the Han-dynasty Prince of Huainan, at Bagong Mountain, and the city hosts an annual tofu culture festival. Nearby Shou County preserves one of China's best-kept ancient city walls, dating to the Song dynasty. The region is a major energy base supplying electricity across eastern China. Its lakes and the Huai River support a well-known freshwater fish and beef-soup cuisine.
